  • 1 cup shredded carrots
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala powder
  • 2 tbsp vegetable oil
  • Salt, to taste

For the Coriander Chutney:

  • 1 cup fresh coriander leaves
  • 2 green chillies, chopped
  • 1 garlic clove, chopped
  • 1 tsp cumin seeds
  • 2 tbsp lemon juice
  • Salt, to taste

Instructions:

  1. Start by washing the rice in cold water until the water runs clear. This helps to remove any excess starch from the rice.

  2. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the chopped onion and garlic and sauté until the onion is translucent.

  3. Add the shredded carrots to the pot and sauté for 2-3 minutes until they start to soften.

  4. Add the coriander powder, turmeric powder, and garam masala powder to the pot and stir well to combine. Cook for a further minute to allow the spices to release their flavors.

  5. Add the washed rice to the pot and stir well to combine with the other ingredients.

  6. Pour in the water and add salt to taste. Stir well and bring to a boil.

  7. Once the water comes to a boil, reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes until the rice is fully cooked and fluffy.

  8. While the rice is cooking, prepare the coriander chutney. In a blender, combine the fresh coriander leaves, chopped green chillies, chopped garlic clove, cumin seeds, lemon juice, and salt. Blend until smooth.

  9. Once the rice is cooked, fluff it up with a fork and transfer to a serving bowl. Top with the coriander chutney and serve hot.

Tips:

  • You can add more or less green chillies to the coriander chutney depending on your spice tolerance.

  • You can also add some roasted cashews or almonds to the pilaf for some added crunch.
